German Ring Bologna Sheet Pan

Sheet pan meals are a convenient way of cooking a variety of vegetables and a protein at the same time. They’re simple, healthy and don’t require a lot of dishes.
Ingredients
- (1 lb) German Ring Bologna
- (2 tbsp.) Sunflower Oil
- (to taste) Signature Seasoning
- (1/2 medium) Red Onion
- (1 medium) Red Bell Pepper
- (1 head) Broccoli
- (4 large) Carrots
- (4-6) Red Potatoes
Directions
- Line full size sheet pan with parchment paper or silicone sheet, if possible, or spray pan with nonstick cooking spray.
- Preheat oven to 400°
- While oven is preheating, bring 2 quarts water to a gentle boil. Wash & cube potatoes, place in boiling water, reduce heat so it doesn’t boil over.
- Chop ring bologna, red onion, red bell pepper and broccoli. Combine in large bowl.
- Remove potatoes from heat. Strain water off. Pour potatoes into bowl with ring bologna and vegetables. Mix in sunflower oil and signature seasoning, to taste.
- Pour onto sheet pan in a single layer. Cook for 30-35 minutes.
