Crockpot Whole Chicken

This recipe is for all the busy moms & dads looking for an easy, healthy dinner that the whole family can enjoy. We know life gets busy and want to share our go-to recipe for cooking a whole chicken in the crockpot. And we have everything you'll need, except for the dried herbs - which are likely in your spice cabinet anyway!
Ingredients
- Whole Chicken
- (1 medium) Yellow Onion
- (2 cloves) Garlic
- (1/2 tsp each) Dried oregano, parsley, rosemary & thyme
Directions
- Spray crock with non-stick cooking spray
- Peel & cut onion into quarters
- Peel garlic cloves and press flat, cut each flattened clove into quarters, place on bottom of crock with the onion
- Combine butter with the dried herbs to create an herbed butter
- Using your fingers, separate the chicken skin from the breast meat, trying hard not to tear the skin. Then spread about 1/2 of the herbed butter on the breast meat, under the skin.
- Repeat, step 5, this time separating the chicken skin from the thigh and placing the remaining herbed butter on the thighs.
- Place chicken, breast side up, in crock, cover.
- Cook on low 6-8 hours, or until breast meat reaches 165F on an instant-read meat thermometer.
By placing the herbed butter between the meat and skin, the meat is able to absorb more of the flavor than if it was placed on top of the skin.
